We started by building up a deep flavor base with onions, garlic, carrots, and leek in our cast iron pot, then let the beef shin simmer slowly in red wine and rich stock until completely tender. While the meat slow-cooked to perfection, we baked a fresh loaf of rustic bread right in the cast iron over the flames. Once the bread was hot and the beef was soft enough to shred by hand, we stacked the sandwiches full, topped them with a generous layer of cheese, and returned them to the pot to bake into a molten, crispy finish.
