Homemade Finnish Sausage – No Pork Secret Recipe!

Ingredients (1 kg / 2.2 lb)
Meat
Lean beef – 500 g
Skinless chicken thighs – 250 g
Fat tail (lamb tail fat) – 250 g
Liquid
Ice-cold water – 50 ml
Salt
Curing salt (0.6% nitrite) – 10 g
Regular salt – 10 g
Spices & Additives
Black pepper – 2 g
Garlic powder – 1.5 g
Nutmeg – 0.7 g
Cardamom – 0.7 g
Ground coriander – 1.5 g
Dextrose – 2 g
Smoke powder – 3 g
Phosphate – 2 g
Sodium ascorbate – 0.5 g
Monosodium glutamate (MSG) – 1 g
Instructions
1. Prepare the Meat
Cut the beef and chicken thighs into cubes.
Cut the fat tail into 8–10 mm cubes, then blanch in boiling water for 2 minutes.
Mix the meat with the curing salt and regular salt.
Refrigerate for 24 hours.
Partially freeze for about 30 minutes before grinding.
2. Grind & Mix
Grind the beef, chicken, and fat tail through a fine plate.
Add the ice-cold water and all the spices.
Mix thoroughly until sticky, keeping the mixture below 10–12°C.
Refrigerate for 1 hour.
3. Stuff the Sausages
Soak the casings in warm water for 5–10 minutes.
Stuff the casings tightly, avoiding air pockets.
Tie and hang at room temperature for 3–4 hours.
4. Heat Treatment
Let the sausages warm at room temperature until the internal temperature reaches 16°C.
Dry at 60°C until the surface is dry and the internal temperature reaches 30°C.
Roast at 85°C until the internal temperature reaches 56°C.
Add boiling water to the tray and cook with steam at 80–85°C until the internal temperature reaches 68–72°C.
Cool in an ice bath for 15–20 minutes.
Place in a plastic bag and refrigerate for 24 hours before serving.
