A Few Days in My Life | Growing an Avocado Plant + Easy Mutton Curry

Come along with me for a couple of days in my life during the half-term holidays. We were blessed with such beautiful weather, Alhamdulillah, so we made the most of the sunshine with lots of trips to the park and a couple of family barbecues. ☀️
Back at home, I got on with some Sunday cleaning, started growing an avocado plant from a seed and made a really simple mutton curry with rice for dinner. I've included the full curry recipe below. ❤️
🥑 Growing an Avocado Plant from Seed
I removed the seed from an avocado, carefully peeled away the outer skin, rinsed and dried it and then inserted three toothpicks around the middle.
Place the seed the correct way up over a clear glass or jar and fill with enough water to cover the bottom of the seed, keeping the toothpicks above the water.
Then it's a case of waiting patiently and hopefully seeing some roots begin to appear! 🌱
🍛 Simple Mutton Curry
Ingredients:
1kg mutton
¼ cup sunflower oil
1 tsp cumin seeds
1 tsp coriander seeds
3 whole cloves
2 medium onions, sliced
3 tomatoes, sliced
1 tbsp garlic & ginger paste
½ tbsp salt
1 tsp garam masala
1 tsp ground cumin
1 tsp ground coriander
½ tsp ground turmeric
½ tsp red chilli powder
1 finger chilli
700ml water
Method:
Heat the oil in a large pan over a medium-high heat. Add the cumin seeds, coriander seeds and cloves and cook for around 1 minute.
Add the onions and cook until soft, then add the tomatoes and continue cooking until softened.
Once the oil begins to separate from the onion and tomato mixture, add the garlic & ginger paste, salt, garam masala, ground cumin, ground coriander, turmeric and chilli powder. Stir everything together.
Add the mutton and cook for approximately 5 minutes.
Pour in 700ml water and bring to the boil. Add the finger chilli, reduce to the lowest heat, cover and simmer for approximately 1 hour, or until the mutton is tender and thoroughly cooked.
We served ours with rice. 😋
