The cedar vats stand in rows in the dark, most of them older than anyone currently employed here, and what is in them has been sitting for two years — possibly three, since nobody wrote it down. Somebody comes in once a week, pushes a long pole across the surface once, puts the lid back and leaves. Nothing is added. No culture is brought in from anywhere. Whatever does the work lives in the wood of the vats and up in the dark beams overhead, and it has been there for fifty years. Nothing in here has ever been scrubbed, because scrubbing it would end the whole operation. The same beans and the same salt in a different building come out tasting like something else entirely, which is why this business cannot be moved. The smell is dark and salty rather than sweet, and it has gone into every board in the place. Each vat is on its own year, going a shade deeper every twelve months, until one day somebody tastes it and decides. Up on the rim of the nearest vat, sitting on the worn cedar edge with nothing at all happening below, a small black cat has picked the highest seat in the store. Golden eyes half open, tail down the outside of the stave, keeping an eye on a surface that will not move until next week. Underneath it all the bass sits deep and analog, with an intimate baritone drifting over tight funk guitar and a dreamy Rhodes, warm tape hiss and a soft crackle of vinyl underneath.
