📖 Want a little more Nonna in your kitchen? Get my digital cookbook, At Nonna’s Table: https://rosascookbook.com/ Soaking breadcrumbs for meatballs keeps them tender with economical ground meat. We test whether that five-minute head start actually shows up when both batches get the same crumbs and liquid. We follow two bowls of ground meat from the same package, one mixed with a fully hydrated panade and the other with dry breadcrumbs added separately. You will see the meat weighed and divided, the five-minute soak and mash for bowl A, identical liquid added dry to bowl B, gentle mixing until no streaks remain, equal scoops shaped without overworking, and both batches cooked to 160 degrees. After cooking we weigh the meatballs and run a blind texture test, checking whether the soaked batch loses less moisture or feels noticeably looser under the fork. When you cut the meatballs open, was the soaked batch clearly looser, only slightly softer, or honestly the same? #meatballs #italianrecipes #cookingtest
