🧁 Recipe
Makes about 7 bagels
🤍 Ingredients
Bread Flour 375g
All-Purpose Flour 125g
Sugar 20g
Salt 8g
Instant Dry Yeast 5g
Water 250g
Cooking Oil 25g
Sliced Black Olives 75g (for the dough)
🤍 Toppings
Black Olives, as much as you like
Mozzarella Cheese, as much as you like
🤍 Method
1. Add the dry ingredients — bread flour, all-purpose flour, sugar, salt, and instant dry yeast — to a mixing bowl. Pour in the water and cooking oil.
2. Knead the dough by hand for 14 minutes. I started by stretching and tearing the dough as I kneaded, then finished by kneading it until smooth. 🤍
3. Add the sliced black olives and gently mix them into the dough. Place the dough in a bowl and let it proof at room temperature for 20–30 minutes.
4. Divide the dough into 7 pieces, about 130g each. Shape each piece into a rectangle, then roll it into a cylinder. Let the dough rest for 10 minutes.
5. Flatten the dough with a rolling pin. Fold one half toward the center and press it down firmly with your palm. Continue folding and pressing each half until the dough is well sealed.
6. Flatten one end of the dough and wrap it around the opposite end. Pinch the seam together to form a bagel shape.
7. Proof at room temperature for 20 minutes, then blanch each bagel in boiling water for 10 seconds total — 5 seconds on each side. ⭐
8. Generously top the blanched bagels with black olives and mozzarella cheese. Bake in a preheated conventional oven at 230°C for 15 minutes, or until golden brown.
