BBQ Spatchcock Chicken with Garlic Herb Butter

Today we’re making Spatchcock Norfolk Black Chickenfrom @sainsburys on the braai, served with crispy potatoes and a punchy parsley & garlic butter. 🔥🍗 First, get the potatoes on the boil and par-cook them. Drain, then get some oil heating in a pan and fry those beauties until golden and seriously crispy. 🥔✨ The chicken was prepped yesterday with a good dry brine and left uncovered in the fridge overnight — helping to season the meat and get that skin beautifully crisp. Get the coals glowing, fire up the braai and get that chicken cooking. Baste generously with the parsley garlic butter as it cooks, building up layers of flavour until the chicken is golden, juicy and cooked through.
