Hi! Thank you for being here. Today we're making chocolate mousse brownies. While I love a warm brownie straight from the oven, sometimes I crave a chilled brownie. The silky shortcut mousse on these make them feel fancy, so they'd be great as a dessert after a nice dinner. They're not too heavy either!
Brownies:
2 cups dark chocolate chips
1 stick unsalted butter
3/4 cup sugar
2 large eggs
2 teaspoons vanilla
1/2 teaspoon salt
1 cup flour
Mousse:
1 cup dark chocolate chips
1/4 cup water
2 tablespoons unsalted butter
1 cup heavy cream
Preheat oven to 325. Line a 9×9 inch pan with parchment paper.
Melt the chocolate chips and butter together. Set aside and let cool.
Place the chocolate in a bowl. Mix in the sugar. Add in the eggs and mix. Now add the vanilla and mix. Add in the salt and the flour and mix.
Spread into the pan.
Bake for about 27 minutes. Be careful not to overbake, you want a few moist crumbs to be there when you test it for doneness. Chill the brownies for a few hours in the fridge.
Now add the other cup of chocolate chips and the two tablespoons of butter along with the water to a pan. Melt and let cool.
Meanwhile, whip the cream. Fold the cooled chocolate into the cream. Top the brownies with it. Let chill for at least four hours.
