No Trim Brisket HD 720p

In this episode I get into my nemesis. The dreaded brisket! And a no trim brisket at that! It started out strong, the fat rendered down nicely to pint where it got probe tender but something happened between putting it to rest and the time for slicing it up. Even though it was juicy it slowly became tough and even tougher by the 2nd day to the point where we gave up and threw it out. Although flavorful, it just didn't hit the mark, tender wise. Th life lesson here was keep trying. It will only get better until I perfect this piece of meat.
