🍞 Biblical Sourdough Bread Recipe
Ingredients:
3 cups whole grain einkorn or spelt flour
½ cup active sourdough starter
1 cup water
1 teaspoon sea salt
Method:
Mix gently until combined — do not knead
Cover and leave overnight (minimum 12 hours fermentation)
Preheat oven to 425°F
Scoop into a lightly oiled loaf pan
Score the top once with a knife
Bake covered with foil for 30 minutes
Remove foil and bake for another 20 minutes until golden brown
Rest for 1 hour before slicing
Active time: 15 minutes — the fermentation does the rest.
Starter (wild yeast sourdough): Mix equal parts whole grain flour and water. Feed daily for about 5 days until bubbly, active, and pleasantly sour. If you see mold or pink/orange discoloration, or it develops a rotten smell, discard it and start again.
