What really happens when you take vinegar before meals after 60? Of everything we've tested so far in this series, this sour habit has the strongest human evidence: studies show it can soften blood sugar spikes after a starchy meal. But one of its most popular promises leaned on a study that has since been retracted. So we went through the research to separate the two.
In this video: what's actually inside the bottle and whether "the mother" matters, what the studies from Sweden and Arizona measured in real blood, which meals vinegar seems to work with, why it changes the spike but hasn't been shown to change the disease, who should skip it, and the weight loss study that fell apart.
THE PANTRY VERDICT
Vinegar for blood sugar spikes after a starchy meal: Proven. Small studies, but consistent and measured in the blood.
Vinegar for long-term blood sugar control: Promising. The direction looks good, but long-term trials haven't shown a clear difference yet.
Apple cider vinegar for dramatic weight loss: Myth. The most famous study behind that promise was retracted.
HOW TO TAKE IT, IF YOU CHOOSE TO
Start small, with a teaspoon or two, and see how your stomach handles it.
Always dilute it in a full glass of water. Never drink it straight from the bottle.
Take it just before, or with, the meal that's heaviest in starch.
Or skip the glass: an oil and vinegar dressing with your meal is a good option too.
Use a straw and rinse your mouth with plain water afterward.
Skip the pills and the gummies.
SAFETY
If you have gastroparesis or a slow-emptying stomach, take insulin, a diuretic, or any medicine for your heart or blood sugar, talk to your doctor before making vinegar a daily habit. Never reduce or stop a prescribed medicine because of something in your pantry.
