A dad in a park buys his three-year-old a tub of pistachio gelato. She hands it back and runs off. When he looks again the tub is warm to the touch, but the scoop is still sitting there, round and glossy, not melted at all. He tries a spoonful. Tepid gelatinous foam. Besides milk, cream and sugar, the label lists dextrose, glucose, gums and emulsifiers.
That dad is the author. Chris van Tulleken is an infectious diseases doctor at University College London, and the book is Ultra-Processed People. He went on to become the first subject in a study at UCL, eating a diet that was eighty per cent ultra-processed for four weeks. His conclusion is blunt: the problem isn't your willpower. It's the recipe, and the business that wrote it.
