Glutinous Rice and Coconut Somosa | Narkel Puli Pitha | Aysha's Food Diary

In this video I will be making Narkel & Gur Puli Pitha (fried coconut dumplings).

INGREDIENTS
• 2 shredded coconut
• 1tsp ground cinnamon
• 1/2 cup gur (approximately 2 heaped tablespoons)
• 2 cups sticky rice
• 1 cup rice flour
• 3/4 cup crumbled jaggery
• 2 cups boiled water
• 700ml oil (for frying)
METHOD
• In a pan bring together the shredded coconut & cinnamon, along with the gur and cook through on a low heat for 5 minutes.
• If the mixture starts sticking to the pan, add 2tbsp of water.
• In another pan, roast the uncooked sticky rice on a medium heat until they have browned a little on the outside.
• Once roasted and cooled, grind the sticky rice to a fine texture.
• Add a cup of regular rice flour to the ground sticky rice along with the crumbled jaggery & the boiled water (this gives me the opportunity to use up any jaggery left in my bowl).
• Mix until the rice has absorbed the water, once it is tough to mix with a spatula, use your hands to make the dough smoother.
• Separate the dough into 8-10 balls.
• Roll out the dough balls until they are about 1/2 a cm thick.
• Shape the dough into a rough oblong dome shape, this doesn't have to be perfect as you can shape the pitha more later.
• Fill the pitha with the cooked and cooled coconut & gur mixture, pack in as much as you can.
• Once filled, close the edges of the pitha and press out any bumps to make them pretty.
• Use your thumb and index finger to seal the edges. Use water to dampen if it is too sticky to work with.
• Deep fry the pitha on a low heat for 10-12 minutes, turn them over so they brown equally on both sides. Remove from frying pan once they have darkened to the colour of the jaggery.
• Plate up and serve hot.
