Directions
Chicken Manchurian
1. Soak the basmati rice in water for 30 minutes.
2. In a bowl, combine the chicken cubes, salt, red chili powder, cumin powder, black pepper powder, lemon juice, soy sauce, ginger garlic paste, and cornflour. Mix well, add the egg, and mix again. Cover and marinate for 30 minutes.
3. Wash the onion, capsicum, and carrots, then cut them into triangular pieces.
4. In a bowl, mix the tomato ketchup, soy sauce, vinegar, chili sauce, sugar, salt, lemon juice, black pepper powder, crushed red chili, and water. Set aside.
5. Heat oil in a wok and fry the marinated chicken cubes over medium-low to medium heat for 4–5 minutes per side, or until golden and cooked through. Remove and place on paper towels.
6. In the same wok, heat ⅓ cup oil and lightly fry the chopped garlic. Add the onion, capsicum, and carrots, and cook for 2–3 minutes.
7. Pour in the prepared sauce mixture and mix well. Add the fried chicken cubes and combine.
8. Mix 1 tbsp cornflour with ¼ cup water to make a slurry. Add it to the gravy and cook for another 2–3 minutes until thickened.
9. Turn off the heat and garnish with spring onion.
Egg Fried Rice
1. Heat 1 cup oil in a pot. Add the chopped garlic and onion and sauté lightly.
2. Add the finely chopped capsicum and carrots. Cook briefly, then add the salt, black pepper powder, and red chili powder. Mix well.
3. Beat the eggs, pour them into the pot, and stir until they become scrambled and grainy. Transfer the egg mixture to a bowl and set aside.
4. In the same pot, add water as required, ⅓ cup oil, whole cumin seeds, and salt. Bring to a boil.
5. Drain the soaked rice, add it to the boiling water, and cook until done. Drain any excess water if necessary.
6. Spread the prepared egg mixture over the rice. Add a little spring onion, cover, and steam on low heat for 15 minutes.
7. After 15 minutes, gently mix the rice and eggs with a spoon and transfer to a serving dish.
Serve the egg fried rice with hot Chicken Manchurian gravy. Garnish with white sesame seeds and crushed red chili, if desired.
