Margarine was invented in response to a government contest launched by an emperor worried about feeding his army. For most of the following century, it was legally required in several American states to be dyed an unappetizing shade of pink, specifically so nobody would confuse it with real butter, a law written not out of consumer protection, but because the dairy industry successfully lobbied to cripple a competitor. And for decades after that fight ended, the food industry knowingly sold a version of margarine containing an artificially created fat that internal and academic research had linked to heart disease, information the industry was in no hurry to make public.
