Italians will tell you carbonara is an ancient Roman dish, born from the charcoal burners of the Apennines, with rules that never change: no cream, no garlic, no onion. In 2023, a historian claimed the opposite: carbonara is American. Both stories have a problem.
The first printed carbonara recipe appeared in a Chicago restaurant guide in 1952. Italy's first recipe, in 1954, called for garlic and Gruyère. Cream stayed in the dish for decades. And in February 2026, a 1939 newspaper from the Dutch East Indies changed the story again.
In this episode: Ada Boni's 1930 cookbook, the 1944 rations story and Renato Gualandi's claim, La Stampa in 1950, Patricia Bronté's Chicago recipe, La Cucina Italiana's 1954 version, the cream decades, the charcoal burner legend, Alberto Grandi's "American carbonara", and the De Koerier article of 23 August 1939.
