Open your refrigerator and look in the drawer at the bottom. There is a bunch of cilantro in there that has turned to black slime. Half a lime as hard as a stone. Tomatoes gone mealy. And a bag of tortillas that dried into cardboard. You are going to throw all of it away, buy it all again on Saturday, and next week it will happen again.
It is not that you bought too much, mija. It is that nobody ever taught you where food actually wants to live. The women in my family knew, not from a book, but because there was no money to buy the cilantro twice.
Today is only about KEEPING. Not recipes, I have other videos for cooking. Where things go, what they go in, and what touches what.
And the one thing that makes all twelve make sense: only FOUR things kill food in a kitchen. Air, water, warmth, and a gas that ripe fruit breathes out. Every habit below is fighting one of those four. Learn the four and you never need to memorize a habit again.
The 12:
1. Cilantro in a glass of water like flowers, with a bag tented over it. Two days becomes two weeks
2. Tortillas live in the cloth, then in the freezer in stacks of ten with paper between
3. Onions and garlic come OUT of the fridge, and never next to the potatoes. They are bad neighbors
4. Tomatoes never see the fridge until they are ripe. Stem side DOWN
5. Limes in a sealed bag in the drawer. Cover the cut side, it is the wound
6. The avocado, and the truth about the pit (it does nothing). Plus the gas, and why the bananas were never the problem
7. Bread and bolillo NEVER go in the fridge. It is the fastest way to make them stale. Freeze them the same day
8. Milk, crema, queso and eggs live at the BACK. The door is the warmest place in the whole refrigerator
9. Beans freeze FLAT, in bags with their broth, then stand up like books
10. Salsa and herbs go in the ice cube tray. Nothing in the bottom of the molcajete goes in the trash again
11. Meat gets divided and labeled the day it comes home. Masking tape and a marker
12. ⚠️ Cooked rice never sits on the stove overnight. Ever. This one is about safety
The honest words:
· "Twice as long" is a floor for some of these (cilantro is five times, bread in the freezer is thirty) and not true for others. Tomatoes and avocados do not last longer. These habits stop them dying EARLY.
· The fridge is not a pause button. Cold slows things, it does not stop them. It should read about 4°C / 40°F on the middle shelf, and if it is packed too full the air cannot move.
· Safety is not a preference. The rice rule and the two-hour rule are the things the old wives were RIGHT about.
