Go to the very back of your pantry and reach behind the things you actually use. There is a bag of beans back there with a date on it from last year, maybe the year before. And I know what happens next, because it happens in every house: you stand there feeling guilty for forgetting it, and then you throw perfectly good food in the garbage. That date is not a safety date, mija. On almost everything in your pantry it does not mean the food became dangerous. It means the company is telling you when they think it stops being at its very best. It is a quality date, and it was chosen by the company that sells the beans. And this is NOT about the end of the world. I am not telling you to build a bunker and I am not going to frighten you about what is coming. A pantry with food in it is not an emergency plan, it is just how a house was always kept. When something was cheap my grandmother bought more of it. That was not fear, that was arithmetic. The 15: 1. La sal — a mineral. There is nothing in it that can rot 2. El azúcar and the piloncillo — nothing grows in sugar, which is why we preserve fruit with it 3. La miel — too sweet and dry to spoil ⚠️ but NEVER for a baby under 12 months 4. El vinagre — it preserves itself. That cloudy blob is harmless 5. Los frijoles secos — safe forever, but they HARDEN, and here is how to cook the old ones 6. El arroz blanco — indefinite ⚠️ but BROWN rice is the opposite and goes rancid in months 7. El maíz para pozole — same story as the beans 8. Los chiles secos — safe, but they fade, and the real enemy is not time 9. Las especias enteras — whole keeps, ground goes quiet. This is why your grandmother's food tasted stronger 10. La maicena — indefinite if you keep it dry 11. El bicarbonato — safe forever but loses its lift. The 10-second vinegar test 12. La pasta seca, el fideo — flour and water, dried hard, nothing to spoil 13. Las latas ⚠️ safe for years past the date IF intact, and the can rule you must memorize 14. La salsa de soya y Maggi — essentially salt and time 15. La vainilla — real vanilla is made with alcohol, and it gets better ⚠️ THE SAFETY RULES, and please do not skip them: · NEVER give honey to a baby under 12 months. Not a taste, not on a pacifier. · NEVER use a can that is BULGING, leaking, badly rusted, or dented on a SEAM or the rim. Do not taste it to check, do not feed it to the dog. Throw it away. A dent on the flat side is fine, a dent on the seam is not. · White rice keeps forever, brown rice does not. Different life, same grain. · Foods that genuinely DO go bad: flour (especially whole wheat), brown rice, nuts, seeds, any oil. Anything with fat can go rancid.
