I’m A Xia! A family down the hill slaughtered a cow today, so I went early in the morning to buy some fresh beef. I had also asked them to save four beef trotters for me. Since it was raining, I fired up the big wood-burning stove and slowly simmered a comforting pot of beef trotter soup. First, I blanched and cleaned the trotters, then added sugarcane, black cardamom, ginger, and scallions. After five hours of simmering, the meat and tendons became incredibly tender and fell right off the bone. I also made a plate of spicy, refreshing chives to serve on the side.
