300 g skin-on zander fillet
A handful of shrimps
Salt, to taste
Freshly ground black pepper
Acqua Pazza
3 tbsp extra virgin olive oil
6-7 garlic cloves, sliced or smashed
1 small chili, sliced (seeds removed for less heat)
200 g cherry tomatoes, halved
180 ml dry white wine
2 cups water
Parsley stems
2 tbsp chopped flat-leaf parsley
Crispy Garlic Bread
Crusty sourdough bread, 2 slices (about 1.5 cm thick)
Extra virgin olive oil
Salt
2 garlic cloves, for rubbing
