Look at the bottom shelf of your refrigerator: a pack of chicken bought for four, two pieces used, the rest going gray. That is not your fault, my dear. Every recipe you were given was written for a table of four, and nobody rewrote it when the table got smaller. Here are ten Japanese dinners for one, each ten minutes at the stove, one pan and one plate. The work is done once, on a day you feel strong, and the freezer keeps it for you. ⭐ THE 10 DINNERS FOR ONE 1. RICE IN THE FREEZER. Cook 3 cups dry rice. While it steams, press 1 cup flat in plastic wrap, 1 inch thick. 6 packets into the freezer. To eat: one corner open, 2 1/2 min in the microwave, until it steams in the middle. $0.20 2. SOUP BEFORE THE KETTLE. 1 1/2 cups water + 1/2 cup frozen spinach, medium, 3 min. 1 beaten egg in a thin line, 30 sec, cooked through. FIRE OFF, then 1 tbsp miso (a salty soybean paste) melted in a ladle of soup. No miso: 2 tsp soy sauce. NEVER boil the miso. $0.60 3. SALTED SALMON. 5 oz fillet (or two), 1/2 tsp salt on both sides, into the refrigerator the day you buy it. Next evening: pat dry, skin side down in a cold nonstick pan, lid on, medium, 7–8 min without turning, until opaque and it flakes. Second fillet for #10. $3 4. GINGER PORK. 4 oz thin-sliced pork loin, 1 tsp oil, medium-high, 1 min a side. 1 tsp sugar, 30 sec. THEN 1 tbsp soy sauce + 1 tsp grated ginger, 30 sec. 3 min rest on the plate (145°F). $2 (the bottled ginger sauce is $5) 5. YESTERDAY'S RICE, FRIED. 1 rice packet, 1 min in the microwave, broken up. 2 tsp oil, medium-high. 1 egg, 30 sec until no wet shine, push aside. 1/2 cup frozen peas and carrots, 2 min. Rice pressed flat, turned every 30 sec, 3 min. 2 tsp soy sauce around the EDGE of the pan, last. $0.80 6. CHICKEN UNDER FOIL. 1 boneless thigh in walnut-sized pieces, 1/4 onion, 1/2 cup water, 2 tsp sugar. Foil with a hole in the middle laid RIGHT ON the food (the drop lid). Gentle bubble, 8 min. Foil off, 1 tbsp soy sauce, 2 min, to 165°F. $1.10 7. BROCCOLI THAT WAITS. Florets + the stem peeled and sliced (NEVER throw away the stem). 2 min in salted boiling water, then ice water 1 min. Dry, refrigerate up to 4 days. Each night: a handful + 1 tsp soy sauce + a pinch of sugar. $0.40 8. A WEEK OF MEAT. 1 lb ground turkey + 2 tbsp sugar + 2 tbsp water in a COLD pan, stirred with 4 chopsticks before the fire. Medium, stirring, 6 min. 3 tbsp soy sauce + 1 tsp ginger, 2 min, to 165°F. 6 bags, frozen flat. $1 a bowl 9. FROZEN DUMPLINGS. 6 potstickers flat side down, cold nonstick pan, 1 tsp oil, medium 2 min. 1/4 cup water, lid on 5 min. Lid off 1–2 min, until the sizzle comes back. Steaming in the center. $1.50 10. CEREAL-NIGHT BOWL. 1 rice packet + the second salmon fillet flaked over it, warmed until steaming. 1 cup hot green tea (ordinary tea bag) poured over. 3 min. $1.20 ⭐ THE LAW: Sweet first, soy last. Sugar early, soy sauce and miso at the very end. THE HONEST PART: • Rice hard at the edges, cold in the middle → packet too thick. Press it flatter. • Soup tasted flat → the miso boiled. Fire off first. • Pork tough → slices too thick. Pork wants 145°F and 3 minutes on the plate. • Older adults: every egg cooked until no wet shine is left. • Into the refrigerator within 2 hours, rice right away. Reheat to 165°F. Rice is reheated ONCE. • The tea bowl three nights in a row is not failing. It is three warm dinners. WHY NOBODY TOLD YOU: A frozen dinner for one is about $4.50, or $135 for 30 nights. These average about $1.70 a plate, about $50 a month. More than $80 back every month. The box sells you the small portion, and plastic wrap does the same. THE HABIT: Half an hour on Sunday: 6 rice packets, chicken one thigh to a bag, turkey into 6 bags, broccoli blanched, 2 salmon fillets salted. Mon salmon · Tue tea bowl · Wed ginger pork · Thu turkey bowl · Fri chicken under foil · Sat fried rice · Sun dumplings. And the pan afterward? That part belongs to my other channel: 🧼 Emiko's Clean Home → [link to the cleaning channel] Tonight: cut the pack you bought for four into one-dinner bags before it goes gray. Then tell me in the comments, in one word, what you ate for dinner last night, and which state your kitchen is in. Not one of them goes unread.
