I made my first sourdough focaccia using my 13-day-old starter! 🍞 I’m still learning, so let’s see how it turned out.
Ingredients:
57 g sourdough starter
290 g lukewarm water
400 g bread flour
8 g salt
3–4 tbsp olive oil
Coarse salt for topping
Instructions:
1. Mix the water and sourdough starter.
2. Add the salt and mix. Then add the olive oil and bread flour. Mix until no dry flour remains.
3. Cover and let the dough rest for 2.5–3 hours.
4. Perform stretch and folds twice.
5. Cover and let the dough rest for another 2 hours.
6. Transfer the dough to an oiled pan and gently stretch it toward the corners.
7. Cover and refrigerate overnight for 10–12 hours.
8. The next day, let the dough rest at room temperature for 30–40 minutes.
9. Drizzle with olive oil, make dimples with your fingers, and sprinkle with coarse salt.
10. Bake at 425°F (220°C) for about 25 minutes, until golden and fully baked.
