The secret to the texture? Nagaimo + tofu-soaked oats. 👀
Nishio-chan came up with this recipe to create that satisfying, hearty texture without using meat. And yes… even Kon-chan, our gluten-free baking expert, was impressed. 😂

• 80g (2.8 oz / about 1 cup) Rolled oats
• 30g (1.1 oz), about 1/4 medium carrot, finely chopped
• 50g (1.8 oz), about 2 large mushrooms, finely chopped (any variety works)
• 50g (1.8 oz / about 1/4 cup) Grated Japanese yam (nagaimo), for binding
• 50g (1.8 oz), diced Japanese yam (nagaimo)
• 8g (0.3 oz / about 1 tbsp) Cornstarch
• 5g (about 1 tsp) Soy sauce
• 2g (0.07 oz / about 1/3 tsp) Salt
• Cornstarch, for coating
• 30g (about 2 tbsp) Neutral oil
