పెసరట్టు ఉప్మా
పెసరపప్పు – 2 కప్పులు
పచ్చిమిర్చి – 3–4
అల్లం – 1 అంగుళం ముక్క
జీలకర్ర – ½ టీస్పూన్
పసుపు – ¼ టీస్పూన్
ఉప్పు – తగినంత
నీరు – అవసరమైనంత
నూనె – పెసరట్టు వేయడానికి
ఉల్లిపాయ – 1, సన్నగా తరిగినది (ఐచ్ఛికం)
1. పెసరపప్పును శుభ్రంగా కడిగి 4–6 గంటలు నానబెట్టాలి.
2. నానిన పెసరపప్పులోని నీటిని వంపేసి, పచ్చిమిర్చి, అల్లం వేసి కొద్దిగా నీటితో మెత్తగా గ్రైండ్ చేసుకోవాలి.
3. అందులో ఉప్పు, జీలకర్ర, పసుపు వేసి బాగా కలపాలి.
4. పెనం వేడి చేసి కొద్దిగా నూనె రాయాలి.
5. ఒక గరిటె పిండిని వేసి పలుచగా గుండ్రంగా పరిచి పెసరట్టు చేయాలి.
6. పైన సన్నగా తరిగిన ఉల్లిపాయను చల్లుకోవాలి.
7. చుట్టూ కొద్దిగా నూనె వేసి పెసరట్టు క్రిస్పీగా, బంగారు రంగులోకి వచ్చే వరకు కాల్చాలి.
8. పెసరట్టును తిప్పి మరో వైపు కూడా సుమారు ఒక నిమిషం కాల్చాలి.
9. ఇప్పుడు తయారు చేసుకున్న ఉప్మాను పెసరట్టుపై పరచాలి.
10. మరో నిమిషం కాల్చి పెసరట్టును మడిచి ప్లేట్లోకి తీసుకోవాలి.
11. వేడి వేడిగా పల్లీ చట్నీతో సర్వ్ చేయాలి.
🍲 ఉప్మా
బొంబాయి రవ్వ / సూజీ – ½ కప్పు
ఉల్లిపాయ – 1, సన్నగా తరిగినది
పచ్చిమిర్చి – 3, తరిగినవి
అల్లం – 1 టీస్పూన్, సన్నగా తరిగినది
ఆవాలు – ½ టీస్పూన్
జీలకర్ర – ½ టీస్పూన్
కరివేపాకు – 1 రెమ్మ
జీడిపప్పు – 8–10 (ఐచ్ఛికం)
నీరు – 2½ కప్పులు
ఉప్పు – తగినంత
నూనె – 2 టేబుల్ స్పూన్లు
1. రవ్వను తక్కువ మంటపై మంచి వాసన వచ్చే వరకు వేయించి పక్కన పెట్టుకోవాలి.
2. ఒక పాన్లో నూనె వేడి చేసి ఆవాలు, జీలకర్ర వేయాలి.
3. జీడిపప్పు వేసి లేత బంగారు రంగు వచ్చే వరకు వేయించాలి.
4. కరివేపాకు, అల్లం, పచ్చిమిర్చి, ఉల్లిపాయ వేసి ఉల్లిపాయ మెత్తబడే వరకు వేయించాలి.
5. నీరు, ఉప్పు వేసి బాగా మరిగించాలి.
6. మరిగిన నీటిలో వేయించిన రవ్వను నెమ్మదిగా వేస్తూ, మరో చేత్తో కలుపుతూ ఉండాలి. ఇలా చేస్తే ఉండలు కట్టకుండా ఉంటుంది.
7. రవ్వ నీటిని పీల్చుకుని మెత్తగా, పొంగినట్లుగా అయ్యే వరకు ఉడికించాలి.
8. తయారైన ఉప్మాను పెసరట్టులో పెట్టడానికి పక్కన పెట్టుకోవాలి.
🥜 పల్లీ చట్నీ
పల్లీలు – 1 కప్పు
పచ్చిమిర్చి – 4–6
వెల్లుల్లి – 2–3 రెబ్బలు
చింతపండు – చిన్న ముక్క
ఉప్పు – తగినంత
నీరు – అవసరమైనంత
నూనె – 1 టీస్పూన్
ఆవాలు – ½ టీస్పూన్
మినప్పప్పు – ½ టీస్పూన్
ఎండుమిర్చి – 1–2
కరివేపాకు – కొద్దిగా
1. పల్లీలను లేత బంగారు రంగు వచ్చే వరకు వేయించి చల్లార్చాలి.
2. కావాలంటే పల్లీల పొట్టు తీసుకోవాలి.
3. పల్లీలు, పచ్చిమిర్చి, వెల్లుల్లి, చింతపండు, ఉప్పు వేసి కొద్దిగా నీటితో మెత్తగా లేదా కొద్దిగా బరకగా గ్రైండ్ చేసుకోవాలి.
4. చిన్న పాన్లో నూనె వేడి చేసి ఆవాలు వేయాలి.
5. ఆవాలు చిటపటలాడిన తర్వాత మినప్పప్పు, ఎండుమిర్చి, కరివేపాకు వేసి వేయించాలి.
6. ఈ తాలింపును పల్లీ చట్నీపై పోసి బాగా కలపాలి.
వేడి వేడి *పెసరట్టు ఉప్మాను పల్లీ చట్నీతో* సర్వ్ చేయండి.
Pesarattu Upma with Peanut Chutney Recipe
Green gram (Moong dal) – 2 cups
Green chilies – 3–4
Ginger – 1-inch piece
Cumin seeds (Jeera) – ½ tsp
Turmeric powder – ¼ tsp
Salt – to taste
Water – as needed
Oil – for making pesarattu
Finely chopped onion – 1 (optional)
1. Wash and soak the moong dal for 4–6 hours.
2. Drain the water and grind the soaked moong dal with green chilies, ginger, and a little water into a smooth batter.
3. Add salt, cumin seeds, and turmeric powder. Mix well.
4. Heat a tawa and lightly grease it with oil.
5. Pour a ladleful of batter onto the tawa and spread it into a thin circle.
6. Sprinkle finely chopped onion on top, if desired.
7. Drizzle a little oil around the edges and cook until the pesarattu turns golden and crisp.
8. Flip and cook the other side for about a minute.
9. Spread the prepared upma over the pesarattu.
10. Cook for another minute, fold the pesarattu, and transfer it to a plate.
11. Serve hot with peanut chutney.
🍲 Upma
Semolina (Rava/Sooji) – ½ cup
Onion – 1, finely chopped
Green chilies – 3, chopped
Ginger – 1 tsp, finely chopped
Mustard seeds – ½ tsp
Cumin seeds – ½ tsp
Curry leaves – 1 sprig
Cashews – 8–10 (optional)
Water – 2½ cups
Salt – to taste
Oil – 2 tbsp
1. Dry roast the rava on low flame until aromatic. Set aside.
2. Heat oil in a pan and add mustard seeds and cumin seeds.
3. Add cashews and fry until lightly golden, if using.
4. Add curry leaves, ginger, green chilies, and chopped onion. Sauté until the onion turns soft.
5. Add water and salt and bring it to a boil.
6. Slowly add the roasted rava while stirring continuously to prevent lumps.
7. Cook until the rava absorbs the water and the upma becomes soft and fluffy.
8. Keep the prepared upma aside to use as the filling for the pesarattu.
🥜 Peanut Chutney (Palli Chutney)
Peanuts – 1 cup
Green chilies – 4–6
Garlic – 2–3 cloves
Tamarind – a small piece
Salt – to taste
Water – as needed
Oil – 1 tsp
Mustard seeds – ½ tsp
Urad dal – ½ tsp
Dry red chili – 1–2
Curry leaves – a few
1. Dry roast the peanuts until lightly golden. Allow them to cool.
2. Remove the peanut skins if desired.
3. Grind the peanuts, green chilies, garlic, tamarind, and salt with a little water into a smooth or slightly coarse chutney.
4. Heat oil in a small pan and add mustard seeds.
5. Once they splutter, add urad dal, dry red chilies, and curry leaves. Fry briefly.
6. Pour the tempering over the chutney and mix well.
