Why Is Shark Meat Normal When Lion Meat Isn't? Walk into a fish and chip shop in South Australia, order "flake," and there's a good chance you're eating shark. In a University of Adelaide DNA study of 125 samples from 94 shops and 10 wholesalers, only 27% was gummy shark, the species recommended for that name. The rest was a mix of eight different sharks, and four of them were threatened. Now try ordering lion. This video follows two predators down very different paths toward the plate. Shark meat has a real chemistry problem: sharks hold urea in their tissues, and after death it breaks down into ammonia. Yet shark still ended up in markets around the world. The answer has less to do with taste or danger than with how an animal gets into the food system: bycatch from tuna and swordfish longlines, rules meant to stop shark finning, a simple bleed-and-soak fix for the ammonia, and market names like "flake" and "rock salmon." Lions have none of those side doors. Nobody catches them by accident, lion meat falls outside USDA's mandatory inspection system, and since 2016 two lion subspecies have been listed under the U.S. Endangered Species Act. We also look at what a friendly name can hide: threatened sharks in the fryer, the FDA and EPA's mercury advice for shark, and why the UN's own shark manual warns that using the whole carcass shouldn't become an excuse to overfish. Along the way: why observers off Atlantic Canada found blue sharks were usually thrown back when nobody would pay for them, how a vinegar soak can pull out up to 90% of the urea, and why a parasite called Trichinella nelsoni turning up in wild lions matters for any meat that skips routine testing. Which one would you have guessed had the more official supply chain? And have you ever eaten flake or rock salmon without knowing it was shark? Tell us in the comments. Educational video only. Shark and lion meat can carry health risks, including mercury and parasites, and some shark species are threatened. Nothing here is dietary, medical, or legal advice. U.S. rules and market practices can change. Sources. The first three pages were opened and read. The rest I read as search-result excerpts and did not open in full, so treat them as "retrieved," not "fully verified."
