Vegan Mapo Tofu recipe | HOW TO MAKE SPICY DOUBANJIANG DOUFU (麻婆豆腐)

LAY HO MA everyone! This is hands down one of my favourite Chinese dishes of all time. I crave the salty and spicy deliciousness. Join me in this episode and learn how to make vegan mapo tofu! Let's being.
Ingredients:
5 dried shiitake mushrooms (rehydrate with 2 cups water)
1 small piece ginger
3 pieces garlic
1 tsp Sichuan peppercorns
4 pieces canned jackfruit
1/2 pound firm or medium tofu
Sesame oil
2 tbsp chili bean sauce (doubanjiang)
1 tbsp potato starch (to 2 tbsp water)
half stick green onion
1 tbsp chili oil
Directions:
1. Begin with rehydrating the dried shiitake mushrooms in a small saucepan with 2 cups of water. Bring to a boil
2. Chop the ginger and garlic finely
3. When the shiitakes are done, dice them up and set the water aside
4. Toast the Sichuan peppercorns in a medium heat pan for about 1min, then grind them in a pestle and mortar
5. Crush the jackfruit and flake them
6. Slice the tofu into bite sized cubes
7. Heat a sauté pan on medium high heat and add a drizzle of sesame oil
8. Add the ginger, garlic, jackfruit, and mushrooms and cook on medium high for 2-3min
9. Add the ground pepper, the chili bean sauce (doubanjiang), and stir
10. Add the water that was set aside from the mushrooms and turn the heat to medium for a couple minutes
11. Make a slurry by combining the 1 tbsp potato starch with 2 tbsp water
12. Slowly pour the slurry into the pan while stirring
13. Turn the heat up to further activate the thickener
14. When the consistency is satisfactory, turn the heat to low, and add the tofu cubes
15. Give it a careful stir and let it cook for 1-2min more
16. Plate the map tofu with a side a white rice
17. Garnish with fresh green onions and chili oil
