Papaitan is a traditional Filipino soup believed to have originated in the Ilocos region of Northern Luzon. Its name comes from the Filipino word “pait,” meaning bitter, referring to the distinct bitter flavor traditionally provided by bile. Originally enjoyed as a hearty dish by farmers, workers, and families, papaitan was a practical way of using different parts of goat or beef, including the innards. Over time, variations developed across the Philippines, with some recipes using goat, beef, or even pork. Today, papaitan remains a beloved Filipino comfort food—especially enjoyed with steaming hot rice and often served during gatherings and special occasions.
