Welcome to Osama Jalali’s Food World ❤️ Today we’re making a rich and royal Mughlai dish — Badami Mutton Qorma made with Hamdard Khaalis Qorma Masala. This qorma combines tender mutton with aromatic whole spices, yoghurt and a luxurious almond-onion paste that gives the gravy a creamy and royal texture. Finished with kewra and ginger juliennes, this dish is perfect for daawat, family dinners and special occasions. 🥣 Ingredients • Oil – 200 ml • Green cardamom – 4 • Cloves – 4 • Black cardamom – 1 • Ginger garlic paste – 2 tbsp • Mutton curry cut – 1 kg • Yoghurt – 200 ml • Hamdard Khaalis Qorma Masala – 4 tbsp • Onions – 3 (sliced) • Peeled almonds – 10–12 • Ginger juliennes – for garnish • Kewra water – 1 tbsp 👨‍🍳 Method Heat oil in a lagan and add green cardamom, cloves and black cardamom. Add ginger garlic paste and sauté. Add mutton and fry until it changes colour. Mix Hamdard Khaalis Qorma Masala into yoghurt and add to the mutton. Cook for 5 minutes and add water. Cover and cook for about 45 minutes until the mutton becomes tender. In another pan, fry sliced onions until golden brown. Blend the fried onions with peeled almonds and a little water into a smooth paste. Add this almond-onion paste to the cooked mutton and sauté for 5 minutes. Finish with kewra water and garnish with ginger juliennes.
