Main Cooking Steps (মূল রান্না):Making it Katta: The Amra (hog plums) are first boiled and peeled. To make the gravy extra katta and tangy, fresh Imli pulp (teঁtul) is added to it.Special Phoron & Vaja Moshla: For phoron, we use Sorshe, Methi, Mouri, and Sukno lonka. Separately, these same spices are dry-roasted and ground into a fine powder. Sprinkle this magic vasa moshla over the tok right before turning off the gas for that authentic flavor.
Ingredients (উপকরণ):
Motor dal: Soaked for 3 hours and ground separately
Posto, Til & Gobindobhog chal: Ground separately into a fine paste for thick gravy
Amra (Hog Plums): Boiled and peeled
Imli pulp: For that extra katta taste
For Phoron & Special Vaja Moshla: Sorshe, Methi, Mouri & Sukno lonkaTurmeric & Red chili powder
Salt & Sugar: As per taste
