Pyaz ki Pakori (Onion Bhaji)
Ingredients
1½ cups gram flour (besan)
250–300 g onions, sliced
A few green chillies, sliced
1 teaspoon turmeric
1 teaspoon ajwain seeds
½ teaspoon Kashmiri chilli powder
Salt, to taste
Water, as needed
Oil, for frying
Chat masala for seasoning at the end.
Method
Add the gram flour, turmeric, Kashmiri chilli powder, ajwain seeds, and salt to a large bowl. Add the sliced onions and green chillies, then use your hands to rub everything together well so the flour coats the onions.
Start adding water gradually, just a splash at a time, mixing continuously until the mixture comes together into a thick, sticky, glossy batter. It should hold together easily and not be too wet or too dry.
Heat oil in a pan over medium heat. Once hot, drop small portions of the mixture into the oil using your fingers or a spoon, forming rough clusters.
Let them fry undisturbed at first. Once they naturally release from the bottom, turn them and continue frying until golden brown and crisp on all sides.
Remove and drain on kitchen paper or a tea towel. Sprinkle with chaat masala while hot and serve with coriander and mint chutney, with lemon on the side.
Note
You can add other ingredients like spinach if you like. The key is to keep the batter thick and cohesive, not runny. Always check and adjust seasoning before frying.
