Homemade Kerala Porotta Recipe
Ingredients – 1
2½ cups maida (all-purpose flour)
Salt to taste
1 teaspoon sugar
¼ teaspoon baking soda
1 egg
1 tablespoon oil
Water as required to knead the dough
Ingredients – 2
2 tablespoons sunflower oil
1 tablespoon ghee
Method
1. In a large mixing bowl, combine maida, salt, sugar and baking soda.
2. Add the egg and 1 tablespoon of oil. Gradually add water and knead into a soft dough.
3. Apply oil over the dough, cover with a damp kitchen towel and let it rest for 1–2 hours.
4. After resting, stretch and fold the dough a few times until it becomes smooth and soft.
5. Apply oil over the dough again and let it rest for another 30 minutes.
6. Divide the dough into 6–7 equal portions and shape them into balls. If you have time, let the dough balls rest for another 30 minutes.
7. Take one dough ball and roll it into a thin chapati.
8. Apply oil evenly over the surface and sprinkle a little maida. Place another rolled chapati on top and repeat the process until all the chapatis are layered.
9. Gently roll the layered dough with a rolling pin. Do not make it too thick.
10. Apply oil over the surface and cut the layered dough into thin strips.
11. Roll the strips together into a spiral shape and gently flatten each one into a porotta.
12. Heat a tawa and cook the porottas on both sides until golden brown and cooked through.
13. Gently crush the cooked porottas between your hands to separate the layers.
Enjoy soft, flaky and delicious homemade Kerala porotta!
