• Boiled potatoes, chopped – 100 g
• Groundnut oil – 2 tbsp (30 ml)
• Cumin seeds (jeera) – 1 tsp

• Green chillies, finely chopped – 2
• Ginger paste – 1 tsp
• Red chilli powder – ¼ tsp, optional and only if permitted

👩🍳 HOW TO MAKE NON-STICKY SABUDANA KHICHDI
Step 1: Wash and soak the sabudana
Rinse the sabudana thoroughly to remove excess surface starch. Add just enough water to reach the level of the pearls. Soak until the pearls become soft and can be easily pressed between your fingers. The soaking time and water requirement may vary depending on the brand and size.
Step 2: Prepare the peanut mixture
Coarsely grind the roasted peanuts. Mix them with the soaked sabudana and fasting-approved rock salt.
Step 3: Prepare the tempering
Heat groundnut oil in a wide pan. Add cumin seeds and allow them to sizzle. Add curry leaves and green chillies if they are permitted during your fast.
Step 4: Add the potatoes
Add the boiled potatoes and ginger paste. Sauté gently until the potatoes are lightly coated with the tempering.
Step 5: Cook the sabudana
Add the prepared sabudana and peanut mixture. Gently mix and cook until the pearls turn translucent and are cooked through. Avoid adding excess water or overcooking, as this can make the khichdi sticky.
Step 6: Finish and serve
Add lemon juice and optional red chilli powder if permitted. Garnish with fresh coriander if suitable for your fasting practice. Serve hot and enjoy fluffy, delicious Sabudana Khichdi!
