Today I'm cooking Gai Pad King (ไก่ผัดขิง), a classic Thai stir-fry featuring tender chicken, plenty of fresh ginger, mushrooms and vegetables in a savoury sauce. This is a wonderfully fragrant dish, and you can easily adjust the amount of ginger to suit your own taste. I used shiitake mushrooms, baby corn and bell pepper, but you can substitute your favourite vegetables or whatever you have available. Served with fragrant jasmine rice, this is simple, satisfying Thai home cooking! 🍗 INGREDIENTS • Chicken thigh, cut into bite-sized pieces • Light Soy sauce, for marinating the chicken • 3 cloves garlic, chopped • 1 bird's-eye chilli, chopped • ½ onion, sliced • Plenty of fresh ginger, julienned • Mushrooms • Baby corn • Bell pepper • Spring Onion • Fresh coriander, to garnish • Jasmine rice, to serve 🥣 THE SAUCE • 1 tbsp oyster sauce • 1 tbsp Light soy sauce • 1 tbsp Toasted Sesame Seed Oil • 1 tbsp fermented soybean sauce or soybean paste • 1 Palm Sugae, or white sugar You can use Thai fermented soybean sauce, Korean doenjang soybean paste, or miso as an alternative. The flavour and saltiness will vary, so adjust to taste. 👨‍🍳 HOW TO COOK IT 1. Marinate the chicken thigh pieces in soy sauce. 2. Stir-fry the garlic and bird's-eye chilli. 3. Add the sliced onion, followed by the mushrooms and vegetables. 4. Add the chicken and stir-fry until cooked through. 5. Add the ginger. For a milder ginger flavour, add it earlier; for a fresher, sharper ginger kick, add it towards the end. 6. Stir in the sauce and bring everything back up to temperature. 7. Serve with jasmine rice and garnish with fresh julienned ginger and coriander. 🌶️ A LITTLE TIP Ginger is the star of Gai Pad King. Don't be shy with it! Adding some ginger towards the end of cooking helps preserve its fresh, peppery character.
