Chakli is one of those traditional festive snacks where the ingredients and technique make all the difference.
For this batch, we're making everything from scratch — starting with rice and whole urad dal, roasting them gently and milling them into a fine flour at home.
We bring the flour together with homemade butter, white sesame seeds, hing and salt, knead it into a workable dough, and shape the Chakli using a traditional hand press.
Finally, we fry them in cold-pressed coconut oil until golden and crisp.
There are a few important details in our process:
• Rice is washed, soaked for an hour, drained and dried completely on a cloth.
• Urad dal is roasted on a low flame until lightly golden, followed by the dried rice.
• Both are cooled completely before milling into a fine flour.
• Homemade butter is incorporated into the flour and checked using the traditional mutthi test.
• Water is added gradually to achieve a firm but workable dough.
• Chakli is shaped using a hand press and fried over medium flame until it stops bubbling and begins to sink to the bottom of the wok.
