Try this recipe at home and enjoy the authentic taste of Karim's and Old Delhi right in your kitchen! ⏱️ PREPARATION & COOKING TIME: Prep Time: 20 mins Marination: 2 to 4 hours (overnight recommended for best results) Cook Time: 25 mins Servings: 4 🛒 INGREDIENTS: First Marination: 750g Chicken (curry cut or drumsticks, with deep gashes) 1 tbsp Ginger-Garlic Paste 1 tbsp Lemon Juice 1 tsp Red Chilli Powder 1/2 tsp Salt Second Marination: 1/2 cup Hung Curd (thick yogurt) 2 tbsp Fresh Cream or Malai 1 tsp Kashmiri Red Chilli Powder (for color) 1/2 tsp Black Pepper Powder 1/2 tsp Garam Masala Powder 1/2 tsp Roasted Cumin Powder 1/2 tsp Chaat Masala 1/4 tsp Yellow Chilli Powder (optional, for authentic street flavor) 1 tbsp Kasuri Methi (roasted & crushed) 2 tbsp Mustard Oil or Melted Butter Salt to taste For the Gravy & Finishing: 2-3 tbsp Butter 1/2 cup Fresh Cream 1/2 cup Fried Onion Paste (Birista) 10-12 Cashews (soaked and ground into a smooth paste) 1/2 tsp Chaat Masala (for sprinkling) Charcoal piece + 1 tsp Ghee (for charcoal smoke / dhungar) 🍳 STEP-BY-STEP INSTRUCTIONS: First Marination: Mix chicken with ginger-garlic paste, lemon juice, chilli powder, and salt. Set aside for 20 minutes. Second Marination: Whisk hung curd, fresh cream, spices, Kasuri Methi, and mustard oil together. Coat the chicken thoroughly and marinate for at least 2 hours in the fridge. Sear/Grill: Heat a grill pan or heavy skillet with a little butter. Cook the chicken pieces on medium-high heat until deeply charred and 90% cooked. (Optional: Pass over an open flame for 1 minute for a charcoal-grilled aroma). Prepare Gravy: In the same pan, reduce heat and add butter, cashew paste, fried onion paste, and remaining marinade. Sauté for 2-3 minutes on low heat. Combine & Simmer: Add fresh cream, a splash of water, and the grilled chicken. Toss well so the chicken is enveloped in the rich sauce. Simmer covered for 5 minutes. Charcoal Smoke (Dhungar): Place a small steel bowl on the chicken, put a burning charcoal piece inside, drizzle ghee over it, and cover immediately with a lid for 3-4 minutes to infuse deep smoky flavor. Serve: Garnish with melted butter, fresh coriander, and a sprinkle of chaat masala. Serve hot with garlic naan, butter rumali roti, or onion rings! 💡 PRO TIP FOR SUCCESS: For maximum tenderness, don't skip the gashes on the chicken—it allows the rich Mughlai spices to penetrate right down to the bone! 🔔 Enjoyed this recipe?
