Ingredients • Fine Semolina (Rava/Sooji): 500 g • Ghee: 150 g (plus a little extra if needed) • Cardamom Seeds / Powder: 2 tsp • Salt: A pinch • Powdered Sugar: 300 g • Raisins / Kishmish: For garnishing (as needed) Step-by-Step Instructions 1. Roast the Semolina: o Heat half of the ghee (around 75 g) in a heavy-bottomed kadai or pan over a low flame. o Add the 500 g fine semolina to the hot ghee. o Roast gently on low flame, stirring continuously so the rava is evenly coated. o Gradually pour in the remaining ghee as required while continuing to roast until the rava turns aromatic and lightly roasted (without browning too deeply). 2. Add Aromatics: o Add 2 tsp cardamom seeds/powder and a pinch of salt. o Mix well and roast on low flame for another minute to combine the flavors evenly. 3. Incorporate Sugar: o Add half of the powdered sugar (150 g) to the warm rava mixture and mix thoroughly until well combined. o Add the remaining powdered sugar and stir continuously until completely incorporated. 4. Rest the Mixture: o Pat down and spread the rava mixture into an even, flat layer across the kadai using a spatula. o Cover with a lid and let it rest for 1-2 hours. This step helps the warm rava absorb the ghee and sugar syrup evenly. 5. Cool and Grind: o Remove the lid and let the mixture cool completely for 1–2 hours at room temperature. (Do not grind while hot). o Transfer the cooled mixture to a mixer grinder jar. o Pulse/grind for about 5 seconds to achieve a smooth, slightly fine texture. 6. Knead & Shape: o Transfer the ground mixture back into the kadai or a wide mixing bowl. o Knead well with your hands until the mixture becomes soft, cohesive, and easy to bind. (If it feels too dry to shape, add a small splash of warm melted ghee). o Take a small portion of the mixture in your palm. o Place a raisin in the center or on top and press firmly to form neat, tight, round ladoos. o Repeat for the remaining mixture. 7. Cool & Store: o Let the ladoos rest to set completely before storing them in an airtight container. #RavaLadoo #RavaLaddu #SoojiLadoo #DiwaliSpecial #DiwaliSweets #IndianSweets #SweetRecipe #HomemadeSweets #EasyRecipes #SaltAndSizzle
