Estimated time: 35–45 minutes; allow longer for multiple batches. Ingredients: • 1 lb (450 g) yellow potatoes, cut into 1/2-inch (1.25 cm) pieces • 1/2 cup finely diced white onion • 2 diced Roma tomatoes, about 1 cup • 1–2 tsp finely chopped serrano to start, or omit; heat varies • 2 tbsp neutral oil, divided: 1 1/2 tbsp for potatoes and 1/2 tbsp for vegetables • 1 tsp fine salt per quart (about 950 ml) of cooking water • 1/4 tsp fine salt to finish, then adjust to taste • Tortillas, beans, and salsa for serving, as desired Method: 1. Scrub and cut the potatoes evenly. Cover with cold salted water by about an inch. Bring to a gentle simmer; begin checking after 5–7 minutes and continue until just tender without falling apart. 2. Drain and spread in one layer. Let surface moisture escape for about 3–5 minutes; gently blot any remaining water. 3. Heat the potato oil in a wide skillet over medium-high heat, without smoking. Brown potatoes in one layer, working in batches if needed. Turn at intervals, checking color; allow approximately 10–15 minutes. Remove to a plate. 4. Reduce heat to medium. Add reserved oil, onion, and chile; soften for about 3–5 minutes. Add tomatoes and finishing salt; cook about 1–2 minutes. Let excess released liquid cook away as needed. 5. Return potatoes and fold together for 30–60 seconds, until hot. Taste and serve promptly. Tomato moisture will soften some of the crust.
