📖 Marcel's Kitchen Fixes — the book (PDF, 22 fixes + a few recipes not on the channel) 👉 https://marcelskitchen.gumroad.com/l/... Homemade BBQ sauce with tomato paste, cider vinegar and a little cold butter — plus the one rule that matters more than the recipe: sweet goes last. Here's how I make it, and when it should touch your ribs or pulled pork. Barbecue sauce is American. I just gave it two habits from my kitchen: cooking the tomato paste first (pincer) and finishing with cold butter off the heat (monter au beurre). 🍅 My working version (adjust to your taste) 2 tbsp tomato paste, cooked first in a spoonful of oil ½ cup apple cider vinegar 1 tbsp Worcestershire sauce 1 tbsp brown sugar ½ tsp salt, 1 tsp black pepper 1 tsp each dry mustard, garlic powder, onion powder Cayenne to taste A splash of water 1 tbsp cold butter, whisked in off the heat Simmer gently (no hard boil) until a spoon dragged across the bottom leaves a trail that closes slowly. Then take it off the heat and whisk in the cold butter. 🔥 The rule: sweet goes last. For ribs, most guides say to brush a sugary sauce on during roughly the last 20–30 minutes, depending on your heat. On pulled pork, I add a little after the meat is pulled. ⚠️ Storage: keep it in the refrigerator. It is not shelf-stable, and please don't can it — canning needs tested recipes. I use mine within a week or two and freeze the rest. That's my own habit, not an official rule. ℹ️ The label details in this video are about one brand (Sweet Baby Ray's Original) and may change over time.
