Shish Taouk is Lebanon’s garlic chicken skewer, and the toum is the real star. 00:00 Intro 00:19 Shish Taouk recipe 02:56 Kenji the Aussie shepherd beach walk 04:36 How to make toum 06:02 Chargrilling the chicken 08:23 Kenji's treat It looks like mayonnaise, but there’s not a single egg in it. The chicken thighs sit in a smoky yoghurt marinade with tomato paste, paprika, coriander and lemon. The yoghurt tenderises the meat gently, so it stays juicy even over high heat. Toum is just garlic, salt, lemon and oil. Garlic does the emulsifying on its own. The trick is a tall, narrow container and a stick blender resting at the bottom. Lift it slowly and it turns thick, white and fluffy in about a minute. No more mortar and pestle arm workout. Grill the skewers, or roast them at 425°F (220°C) if the weather’s not on your side. Either way, aim for 165°F (74°C) in the thickest piece. Serve with warm flatbread, pickles, tomato and lemon. Then try not to eat the toum with a spoon. Give it a go. 👉 Get this written recipe here: https://recipe30.com/lebanese-garlic-... 👉 Learn more about the knife I use in every video, including this one See here: https://taski.store/products/kenji-7 👉 Check out my favourite kitchen tools (affiliate): https://amzn.to/4gjGmtz 👉 Follow me on Instagram:   / recipe30   👉 Follow me on Facebook:   / recipe30   Want to mail me something?
