Tips for Perfect Restaurant-Style Chicken Changezi 🍗
1. Marination: Marinate the chicken for at least 1 hour. For the best flavour, marinate it for 3–4 hours in the refrigerator.
2. Chicken: Use curry-cut chicken with bones for a richer gravy and better flavour.
3. Frying: Cook the marinated chicken on high heat until the excess moisture dries out. This helps develop a delicious, roasted flavour.
4. Tomato Paste: Cook the tomato paste thoroughly until the raw smell disappears and the oil starts separating.
5. Cashew Paste: Soak cashews in warm water for 20 minutes before grinding them into a smooth paste. You can also use blanched almonds as an alternative.
6. Creamy Gravy: Add fresh cream towards the end and cook on low heat for only 2–3 minutes. Avoid boiling the gravy vigorously after adding cream.
7. Adjust Consistency: Add a little hot water if the gravy becomes too thick.
8. Smoky Flavour: Use the charcoal smoking technique (dhungar) for an authentic restaurant-style aroma. Keep the charcoal in a heatproof bowl and remove it carefully before serving.
9. Spice Level: Adjust the red chilli powder according to your taste. Kashmiri red chilli powder gives the gravy a beautiful colour.
10. One-Pot Cooking: Use a heavy-bottomed pot to prevent the chicken and gravy from sticking or burning.
11. Final Touch: Garnish with fresh coriander and a little cream before serving.
12. Serving Suggestion: Serve hot with butter naan, tandoori roti, kulcha or steamed rice for a delicious meal.
Pro Tip: The secret to delicious Chicken Changezi is properly roasting the chicken and tomato masala before adding the cashew paste and cream.
