The first Thanksgiving I spent alone, I set the table for twelve out of habit. A twenty-pound turkey makes no sense for one person, and skipping the holiday feels even worse. So this is my whole Thanksgiving feast for one: every classic, on one plate, with no leftovers for weeks, and the big oven never comes on.
I'm Nancy. I cooked Thanksgiving for a crowd for 40 years. Here's my plan, my list and every recipe, so you don't have to pause.
SHOPPING LIST (about $30): 1 bone-in turkey thigh (~1.5 lb), 1 russet potato, 1 sweet potato, fresh cranberries, boxed stuffing, cream of mushroom soup, fried onions, frozen green beans, marshmallows, small can of pumpkin, 1 dinner roll.
THE DAY BEFORE
Cranberry sauce: 1 cup cranberries, 1/4 cup sugar, 1/4 cup orange juice. Simmer ~10 min until most pop.
Pumpkin custard in a mug: 1/3 cup pumpkin, 1 egg, 2 tbsp brown sugar, 3 tbsp milk, 1/2 tsp pumpkin pie spice. Greased oven-safe mug, toaster oven 325°F ~25 min.
THANKSGIVING DAY (toaster oven + microwave)
Turkey thigh: pat dry; 1 tbsp melted butter + 1/2 tsp salt, 1/2 tsp sage, 1/4 tsp thyme, garlic powder, pepper, half under the skin. 350°F ~1 hr 15 min to 175°F. Rest 15 min.
Stuffing cups: 1/2 cup mix + 1/3 cup hot broth, 1 tbsp frozen onion, pinch celery salt. 3 greased muffin cups, last 20 min with the turkey.
Mashed potato: 1 russet, microwave 8-9 min; mash with 1 tbsp butter, 2 tbsp warm milk, salt.
Green bean casserole: 1 cup frozen green beans, 1/3 can mushroom soup, 1 tbsp milk, pepper. Ramekin 350°F 15 min + fried onions 5 min.
Sweet potato: microwave 6-8 min; mash with 1 tbsp butter, 1 tsp brown sugar, cinnamon, salt. Marshmallows, 400°F 3-4 min (watch it).
Pan gravy: drippings + 1 tbsp flour, 1 min; whisk in 1/2 cup broth ~3 min. Pepper, salt to taste.

If you're spending Thanksgiving alone this year, set the table anyway. You're worth the good plate. Happy Thanksgiving from my table to yours.
