Mogem ani Moog Curry (Ash Gourd and Mung Bean Curry)
Mogem ani Moog Curry is a traditional Mangalorean dish made with ash gourd (mogem) and sprouted mung beans (moog). This flavorful curry is a staple in many Konkani households, loved for its nutritious ingredients and comforting flavors. The dish is mildly spiced, with a coconut-based gravy that pairs well with rice or flatbreads.
Ingredients
For the Curry:
Ash Gourd (Mogem): 1 cup, cubed
Sprouted Moong (Mung Beans): 1 cup
water 1.5 cup
Salt: To taste
For the Masala Paste:
Grated Coconut: 1 cup
Dry Red Chilies: 7 (adjust to taste)
Coriander Seeds: 1 tbsp
Cumin Seeds: 1 tsp
Tamarind Pulp: 1 tsp
mustard seeds: 1 tsp
turmeric: 1/2 tsp
garlic: 5 cloves
Onion: 1
Pepper corn: 8
For Tempering:
Mustard Seeds: 1 tsp
Curry Leaves: 2 sprigs
Crushed garlic: 4
red Chilli: 1
Asafoetida (Hing): A pinch
Oil (preferably coconut oil): 1 tbsp
Instructions
Prepare the Sprouted Moong:
Soak mung beans overnight. Drain the water and tie them in a clean muslin cloth. Let them sprout for a day.
Cook the Vegetables:
In a pot, combine the ash gourd cubes and sprouted mung beans. Add salt, and water just enough to cover the ingredients. Cook until the ash gourd is tender.
Prepare the Masala Paste:
Grind the ingredients with grated coconut and tamarind pulp, adding a little water to form a smooth paste.
Add the Masala to the Curry:
Once the vegetables are cooked, add the prepared masala paste to the pot. Mix well and adjust the consistency by adding water if needed. Simmer for 5-7 minutes until the flavors blend.
Prepare the Tempering:
Heat oil in a small pan. Add mustard seeds and let them splutter. Add crushed garlic, red chilli, Add curry leaves and asafoetida, and sauté for a few seconds.
Pour this tempering over the curry and mix well.
Serve:
Serve hot with steamed rice or chapati.
Tips
If sprouting mung beans is time-consuming, you can use regular soaked mung beans, but the flavor of sprouted beans is richer.
Adjust the number of chilies based on your spice preference.
Coconut oil enhances the authentic flavor of this Mangalorean dish.
