Ever wondered how cafés get their croissants so extraordinarily fluffy with distinct, crispy layers? In this video, we break down the exact café-style techniques—from dough temperature control to butter lamination and the perfect bake.

Salt: 5 g
Instant Dry Yeast: 2 g

📋 Step-by-Step Instructions:
1. Mixing & Kneading the Dough:
Combine the strong flour, sugar, salt, instant dry yeast, egg, and the cold milk-and-water mixture. Knead for 3 minutes, then add the butter and continue kneading for 8–10 minutes.
Check the temperature: if the dough feels warmer than body temperature, refrigerate in a plastic bag for 30 minutes. Continue kneading until it passes the windowpane test (thin, translucent membrane without tearing).
Golden Rule: The secret to perfect croissants is keeping both the dough and the butter consistently cold.
2. Overnight Rest & Butter Lamination:
Once it passes the windowpane test, wrap the dough in plastic and refrigerate for 12 hours. Meanwhile, flatten cold butter into a flexible sheet inside a plastic bag and chill.
Next Day:
Roll out the chilled dough. The butter should be cold but flexible (like silicone), not brittle.
Place the butter sheet in the center of the dough and seal edges completely.
Roll out in one direction and complete the first book fold. Wrap and chill for 30 minutes.
Roll out again, make the final three-fold, wrap, and chill for another 30 minutes.
Roll out the dough, cut into elongated triangles, and roll into croissants.
3. Final Proofing & Baking:
Place the shaped croissants on a baking tray inside a large plastic bag with plenty of headroom. Place a cup of hot (not boiling) water on the tray without touching the dough.
Proof in a moderate/cool room for 3–4 hours until they wobble gently like jelly when shaken.
Baking Instructions:
Bake at 190–200°C (374–392°F) for 8–10 minutes.
Reduce temperature to 170°C (338°F) and bake for another 10 minutes until golden brown.
