Can you eat delicious, healthy, plant-based meals all day for less than the price of a single takeout order? Today, I’m taking on the $15 Vegan Grocery Challenge at Hannaford! We are making breakfast, lunch, and dinner with absolutely NO pasta, zero food waste, and every single meal takes under 20 minutes to make. If you think eating vegan on a budget means bland, dry food, wait until you see how we use simple pantry spices and smart ingredient cross-utilization to make cheap staples taste high-end. If my cooking videos or walks help you show up for yourself, you can support my little corner of the internet here 💛 ➡️ Buy Me a Coffee: buymeacoffee.com/GinaLyn Thank you for being part of this journey. 🧂 Tex-Mex Spice Blend 1 tablespoon Chili Powder 1 teaspoon Cumin 1/2 teaspoon Garlic Powder 1/2 teaspoon Onion Powder 1 teaspoon Salt 1/2 teaspoon Black Pepper BREAKFAST: 5-Minute High-Protein Creamy Banana Oatmeal A brilliant budget hack to get a rich, milky consistency without buying expensive plant milk! Blending a fraction of our tofu block with half a banana creates a thick, high-protein cream base that elevates humble oats into a luxury breakfast. Ingredients: 1/2 cup Hannaford Old Fashioned Oats 1/2 cup Water (for the oats) 1/4 block Nature’s Promise Tofu 1/2 Banana Splash of water (just enough to blend the tofu and banana) 1 pinch of salt and a dash of cinnamon (from your pantry) 1/2 Banana (remaining half, sliced for topping) Instructions: 1. In a small blender cup, combine 1/4 block of tofu, 1/2 of a banana, and a small splash of water. Blend on high until completely smooth, creamy, and liquid. 2. In a small saucepan on the stove, bring 1/2 cup of water and a pinch of salt to a boil over medium-high heat. 3. Stir in the 1/2 cup of oats and reduce the heat to low. Simmer for 3 to 5 minutes, stirring occasionally, until the oats absorb the water. 4. Pour the blended creamy tofu-banana mixture directly into the saucepan with the hot oats. Stir thoroughly for 30 seconds until heated through and perfectly creamy. 5. Transfer to a bowl and top with slices from the remaining half of the banana and a dust of cinnamon. 🥗 LUNCH: 10-Minute Tomato, Bean & Corn Rice Bowl A fast, juicy, and fiber-rich rice bowl that uses standard pantry staples to maximize flavor. Cross-utilizing the tomato juices keeps this dish perfectly moist without needing an expensive store-bought dressing. Ingredients: 1 serving Minute Rice 1/2 can Black Beans (drained and rinsed) 1/2 can Corn (drained) 1/2 can Hannaford Diced Tomatoes (with juices) 1.5 tsp Homemade Tex-Mex Spice Blend (Chili powder, cumin, garlic powder, salt, pepper) Instructions: 1. Prepare one serving of Minute Rice according to the package instructions. 2. In a bowl, combine the warm rice with 1/2 can of black beans and 1/2 can of corn. 3. Pour in 1/2 can of diced tomatoes along with their juices to coat the rice. 4. Add 1.5 teaspoons of the spice blend and stir thoroughly until everything is well combined and heated through. DINNER: 15-Minute Tex-Mex Tofu & Veggie Skillet A vibrant, protein-packed skillet that features a zero-waste design. By using the remaining halves of your canned goods alongside frozen peppers and onions, you get a thick, restaurant-quality meal on a tight budget. Ingredients: 3/4 block Nature’s Promise Tofu (cubed and pressed dry) 1 cup Frozen Peppers and Onions 1/2 can Black Beans (remaining half) 1/2 can Corn (remaining half) 1/2 can Hannaford Diced Tomatoes (remaining half) Remaining Tex-Mex Spice Blend (approx. 2 to 2.5 tsp) 1 tsp cooking oil (from your pantry) Instructions: 1. Heat 1 teaspoon of cooking oil in a skillet over medium-high heat. 2. Add the cubed tofu and sear for 5 minutes, flipping occasionally until golden brown. 3. Dust the remaining Tex-Mex spice blend directly over the tofu to bloom the spices. 4. Toss in the frozen peppers and onions, sautéing for 3–4 minutes until they soften. 5. Pour in the remaining black beans, corn, and diced tomatoes. 6. Lower the heat and simmer for 5 minutes, stirring occasionally, until the tomato juices reduce into a thick sauce that coats the tofu and vegetables. #VeganOnABudget #grocerychallenge #Hannaford #plantbasedeating #mealprep #zerofoodwaste #BudgetCooking #walkingforweightloss #lifeover50 #newenglandlife #Budgetmeals #healthyeating
