Same wheat. Same recipe. Two mills. I milled hard white wheat in the KitchenAid grain mill attachment and the NutriMill Harvest, then baked one loaf from each to find out: is a dedicated grain mill really worth it? THE RESULTS KitchenAid: 6 passes, 9 min 30 sec, 4 in loaf NutriMill Harvest: 1 pass, 1 min 46 sec, 4½ in loaf Harvest flour was finer, and the loaf was softer and a little sweeter THE RECIPE (per loaf, 9x5 pan) 420 g fresh-milled hard white wheat 117 g water + 122 g milk, warmed to ~108°F 58 g butter + 42 g raw honey, melted together 7 g yeast + a pinch of sugar in 110°F water (proof until foamy) 5 g salt Autolyse 30 min → knead ~20 min → first rise 90 min → shape → proof at 80°F about 45 min (until it crowns the pan) → bake 350°F for 35 min (internal 190°F+) CHAPTERS 0:00 Same wheat, same recipe, two mills 0:25 Milling with the KitchenAid attachment 0:54 Milling with the NutriMill Harvest 1:09 Comparing the flour 1:29 Making the dough 4:05 Shaping the loaves 5:14 Second rise in the proof box 5:46 Baking 6:20 Results: height and slicing 6:47 Crumb, squish and tear test 7:18 Taste test and verdict Not sponsored.
