This Blueberry Skillet Cobbler is almost too easy to make! Juicy blueberries, golden buttery topping, all baked in one skillet. This is the perfect easy dessert for weeknights, family dinners and last-minute guests. No fancy tools, just simple ingredients and one pan. Serve it warm with a scoop of vanilla ice cream! Try it this week and let me know in the comments how yours turned out. INGREDIENTS Unsalted butter 57 g (4 tbsp) All-purpose flour 125 g (1 cup) Baking powder 8 g (2 tsp) Salt 3 g (1/2 tsp) Buttermilk 240 ml (1 cup) White sugar 70 g Brown sugar 100 g Fresh blueberries 255 g Vanilla extract 5 ml (1 tsp) Lemon juice 60 ml (1/4 cup) Lemon zest - To taste Vanilla ice cream - For serving, optional. 1. Preheat the oven to 400°F (205°C). Put the butter in an oven-safe cast-iron skillet and place it in the oven just until the butter melts. Carefully remove the hot skillet. 2. In a mixing bowl, whisk together the flour, baking powder, salt, and 70 g white sugar. 3. Pour in the buttermilk and vanilla extract. Stir just until the batter comes together; do not overmix. 4. In a separate bowl, gently toss the blueberries with 100 g brown sugar, lemon zest, and lemon juice. 5. Pour the batter into the skillet over the melted butter. Do not stir the butter into the batter. 6. Spoon the blueberry mixture evenly over the batter. Do not mix the layers. 7. Reduce the oven temperature to 375°F (190°C). Bake for about 30 minutes, or until the top is golden and the center is set. If needed, bake a little longer, checking doneness. 8. Let cool for a few minutes. Serve warm, straight from the skillet, with a scoop of vanilla ice cream if desired.
