Friends, today I'm sharing the authentic recipe for Mitha Sata, Kutchi Mini Sata, and Patan Na Devda (મીઠા સાટા, કરછી મીની સાટા, પાટણ નાં દેવડા)! Originating from the historic cultural regions of Kutch and Patan in Gujarat, these traditional crispy fried sweet delicacies are a treasured part of Gujarati culinary heritage. Also popular across western India in forms like Devda or Khaja, Sata is famous for its distinct flaky texture achieved by deep frying a tightly bound flour dough in pure ghee/oil, which is then enveloped in a thick, crystalline sugar syrup (chasni) coating. Known for its incredible shelf-life of 15-30 days without refrigeration, this iconic sweet is a beloved festive essential, gift item, and traveling snack cherished across generations.

Ingredients
• 125 grams (1 cup) all purpose flour, मैदा
• 150 grams (1 cup) Sugar, चीनी
• 1 cup water, पानी
• 1/8 tsp baking soda, बेकिंग सोडा
• 2 tbsp Ghee, घी
• Rose petals and pista for garnishing, गुलाब की पत्ती और पिस्ता
• Oil/Ghee for Frying, तलने के लिए तेल/घी
Method:
1. In a large mixing bowl, combine all-purpose flour (maida), ghee, baking soda, and a little water.
2. Knead firmly to bind a smooth yet hard dough. Cover and set aside to rest for 30 minutes.
3. Divide the rested dough into small, equal-sized pieces.
4. Take each piece and hand-roll tightly into neat round shapes. Using your index finger, press gently in the middle to create an incomplete center hole/dimple.
5. Heat ghee or oil in a deep pan over the lowest flame.
6. Gently drop all prepared pieces into the oil/ghee and deep fry slowly for about 20 minutes, stirring occasionally, until they turn a beautiful light pinkish-brown color.
7. Remove the fried sata carefully and drain excess oil.
8. In a separate pan, combine sugar and water to prepare a 1.5-thread consistency sugar syrup (chasni).
9. Pour the hot sugar syrup evenly over the mini sata, ensuring every piece is completely coated on all sides.
10. Allow them to cool down completely at room temperature until the sugar crystallizes into a crisp, opaque white layer around each piece.
11. Garnish with crushed pistachios and dried rose petals. Serve fresh or store in an airtight container (shelf life: 15–30 days).
