Power Breakfast Bowl (makes 2 servings) Ingredients 2 cups soy milk (I use unsweetened) 1-2 tsp cinnamon 1-2 tsp nutmeg (optional) 1-2 tsp cloves (optional) 2 TBSP Flaxseed 2 TBSP Hemp hearts 2 TBSP Wheat germ 2 TBSP Chia Seeds 1/4 -1/2 cup raisins 2 bananas ½ -3/4 cup frozen berries Other fruit of choice (optional) ¼ cup pumpkin seeds Date syrup Directions: Combine the soy milk, spices, flaxseed, hemp hearts, wheat germ and chia seeds in a saucepan, whisk the ingredients together and heat on the stovetop until the soy milk begins to bubble. It is important to stir the mixture a few times while it is heating so that the chia seeds disperse and do not clump together. When the milk begins to boil, remove from the heat and let sit for a few minutes. The mixture will thicken as it sits as the chia seeds will absorb some of the liquid. Cut the fruit into bite sized pieces and divide into two bowls. I thaw the frozen berries before adding to the bowls. Divide the soy milk mixture between the two bowls and stir to combine the fruit evenly. Top with pumpkin seeds and a drizzle of date syrup to sweeten. Enjoy!
