If corn in your house usually means boiling it and adding butter, today I’m showing you two delicious Indian street-style corn recipes that are easy to make in a regular Western kitchen.
We’re making:
1. Bhutta — smoky roasted corn rubbed with lemon, roasted cumin, chili, salt, and a little chaat masala.
2. Corn Chaat — sweet corn tossed with finely chopped vegetables, spices, lemon, and a little crunch at the end.
You do not need a charcoal cart, a gas stove, or a cupboard full of Indian spices.
BHUTTA TIPS
Dry the corn well before roasting so it browns properly.
Use a heavy skillet, broiler, outdoor grill, or gas flame.
Western sweet corn is usually tender, so do not overcook it.
Let the corn develop scattered charred patches instead of constantly turning it.
Dip the cut side of a lemon into the spice mix and rub it directly over the hot corn.
If using chaat masala, start with less plain salt.
For a mild version, use lemon, salt, roasted cumin, and black pepper.
CORN CHAAT TIPS
Frozen sweet corn works beautifully.
Do not boil it for too long.
Let a few kernels pick up a little golden color in a skillet.
Cool the corn slightly before adding cucumber, tomato, onion, and coriander.
Cut the vegetables small so every spoonful has a little of everything.
If making it ahead, remove some watery tomato pulp and cucumber seeds.
Add the dry spices before the lemon so they coat everything evenly.
Add final salt and lemon just before serving.
Add sev at the very end so it stays crisp.
If you cannot find sev, lightly crushed plain tortilla chips work surprisingly well.
The same corn can become two completely different dishes — one smoky and warm, the other fresh, crunchy, and tangy.
