These apple cinnamon muffins are soft, cozy, and filled with little pieces of apple, warm cinnamon, and crunchy walnuts. 🍎🤎
They’re finished with a buttery walnut crumb topping that gets golden and crisp while the muffins stay soft and tender underneath.
This is such a simple fall bake — no special equipment needed, just mix, top, and bake. I made these on a cloudy day, which somehow made the warm cinnamon and apple smell even cozier. ☁️🍂
This recipe makes 12 muffins
🍎 Walnut Crumb Topping
80g all-purpose flour
80g brown sugar
50g walnuts, chopped
1/2 tsp cinnamon
56g / 1/4 stick melted butter

240g all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
120g brown sugar
56g / 1/4 stick melted butter
50g neutral oil (I used olive oil)
2 eggs
1 tsp vanilla extract
60g Greek yogurt or sour cream
300g diced apples (about 2 apples)
How to Make
Make the crumb topping first
1. Add the flour, brown sugar, chopped walnuts, and cinnamon to a bowl and mix together.
2. Pour in the melted butter and mix until the mixture becomes crumbly. Place the crumb topping in the fridge while you make the muffin batter.
Make the muffin batter
1. In a large bowl, mix the brown sugar, melted butter, and oil until smooth.
2. Add the eggs, vanilla, and Greek yogurt or sour cream. Mix until smooth and combined.
3. Add the flour, baking powder, baking soda, salt, and cinnamon. Mix until about halfway combined.
4. Add the diced apples and gently fold until everything is just combined.
5. Divide the batter into a muffin pan, then generously add the chilled crumb topping over each muffin. Gently press the crumbs into the batter so they stick while baking.
6. Bake at **400°F / 200°C for 22–24 minutes**, or until the muffins are golden and a toothpick comes out clean.
7. Let them cool slightly, then enjoy them warm with a cup of coffee or tea. ☕🍎
